Amaretto Sour

The Amaretto Sour is a classic cocktail that perfectly balances the sweet, nutty flavor of amaretto with the sharp tang of fresh lemon. When made with egg white, it transforms into a sophisticated drink with a rich, velvety texture and a beautiful frothy top.

Ingredients

  • 2 oz Amaretto Liqueur
  • 1 oz Fresh Lemon Juice
  • ½ oz Simple Syrup
  • ½ oz Egg White (optional)
  • Garnish: Orange Slice & Cherry

Instructions

  1. Dry Shake (for foam): If using egg white, combine the amaretto, lemon juice, simple syrup, and egg white in a cocktail shaker *without* ice. Seal and shake vigorously for about 15 seconds to create a thick foam.
  2. Wet Shake: Add a generous amount of ice to the shaker. Seal again and shake hard for another 10-12 seconds until the shaker is ice-cold to the touch.
  3. Strain: Strain the cocktail into a rocks glass filled with fresh ice. The foam will settle on top.
  4. Garnish: Garnish with a fresh orange slice and a maraschino cherry.

Pro Tips for Perfection

The Importance of the Dry Shake: The initial shake without ice (the "dry shake") is the secret to a perfect, silky foam. It allows the proteins in the egg white to emulsify and create a rich, stable froth that wouldn't be possible if shaken with ice from the start, as the cold would inhibit the process.

Balance is Key: An Amaretto Sour can easily become too sweet. Always use freshly squeezed lemon juice, not bottled. If you prefer a less sweet drink, you can slightly reduce the amount of simple syrup. For added complexity, add a couple of dashes of Angostura bitters to the shaker.
