Barracuda
A sparkling tropical cocktail and a contemporary classic, the Barracuda is a vibrant and complex drink. It combines the richness of gold rum with the herbal sweetness of Galliano, the tropical tang of pineapple, and a celebratory top of Prosecco.
Ingredients
- 1 ½ oz Gold Rum
- ½ oz Galliano L'Autentico
- 1 oz Fresh Pineapple Juice
- 1 dash Fresh Lime Juice
- Top with Prosecco
- Garnish: Pineapple Slice & Cherry
Instructions
- Chill Your Glass: Place a large coupe or margarita glass in the freezer to get it nice and cold.
- Combine and Shake: Add the gold rum, Galliano, pineapple juice, and a dash of lime juice to a cocktail shaker filled with ice.
- Shake Well: Shake vigorously for about 15 seconds until the shaker is ice-cold.
- Strain and Top: Strain the mixture into your chilled glass. Gently top with cold Prosecco or another dry sparkling wine.
- Garnish: Garnish with a slice of fresh pineapple and a quality cocktail cherry.

Preserve the Bubbles: The final topping of Prosecco adds a bright, effervescent lift to the drink. Pour it slowly and gently down the side of the glass to avoid losing too much carbonation. There is no need to stir after adding the sparkling wine.
