Gin Fizz

A timeless classic that's light, airy, and wonderfully refreshing. The Gin Fizz is essentially a gin sour that's made magical by the addition of egg white and soda water, creating a rich, frothy head that sits atop the crisp cocktail.

Ingredients

  • 2 oz Gin
  • 1 oz Fresh Lemon Juice
  • ¾ oz Simple Syrup
  • 1 Egg White
  • 1 oz Club Soda, chilled
  • Garnish: Lemon Twist

Instructions

  1. Dry Shake: Combine the gin, lemon juice, simple syrup, and egg white in a shaker without ice. Seal and shake vigorously for 15 seconds to emulsify the egg white and build a foam.
  2. Wet Shake: Add a generous amount of ice to the shaker and shake again, hard, for another 15 seconds until the outside of the shaker is frosty.
  3. Strain and Let Settle: Strain the mixture into a chilled Collins or Fizz glass, making sure not to include any ice. Let the drink sit for about a minute, allowing the foam to separate and rise to the top.
  4. Top with Soda: Gently pour the chilled club soda directly into the center of the drink. This will cause the foam head to rise beautifully above the rim of the glass.
  5. Garnish: Garnish with a fresh lemon twist and serve immediately.

Pro Tips for Perfection

The "Fizz" Technique: The magic of the Gin Fizz is its towering foam head. This is achieved by straining without ice and then topping with soda *after* the foam has had a moment to set. Pouring the soda into the middle of the drink lifts the foam for that iconic presentation.

Gin Fizz vs. Tom Collins: These two drinks are very similar but have key differences. A Tom Collins is built in the glass over ice and doesn't contain egg white. A Gin Fizz is shaken with egg white and served "straight up" (without ice) in the glass to showcase its foamy head.
