Horse's Neck

A classic highball named for its distinctive garnish, the Horse's Neck is a simple and refreshing drink. It combines the warmth of brandy or whiskey with the gentle spice of ginger ale, all brought together by the bright aroma of a long lemon peel.

Ingredients

  • 2 oz Brandy or Cognac
  • 4 oz Ginger Ale, chilled
  • 2 dashes Angostura Bitters (optional)
  • Garnish: Long Lemon Peel

Instructions

  1. Prepare the Garnish: Using a channel knife or vegetable peeler, carefully cut a long, continuous spiral of peel from a whole lemon.
  2. Prepare the Glass: Place the long lemon peel inside a chilled highball glass, draping one end over the rim to create the "horse's neck." Fill the glass with ice.
  3. Build the Drink: Pour the brandy and optional bitters over the ice.
  4. Top and Serve: Gently top with chilled ginger ale and give a very brief stir. Serve immediately.

Pro Tips for Perfection

The Garnish is the Drink: The entire identity of the Horse's Neck comes from its impressive garnish. Take your time to create a long, unbroken peel. The aroma from the lemon oils is a key component of the drinking experience.

Brandy or Whiskey?: The drink is fantastic with either spirit. The original version was made with brandy. A "Horse's Neck with a Kick" is the version with spirit, while the original non-alcoholic version is just ginger ale and the lemon garnish. Using bourbon instead of brandy is also a very popular and delicious variation.
