Porto Flip

A classic "flip" cocktail dating back to the 19th century, the Porto Flip is a rich, creamy, and decadent drink perfect for after dinner. The use of a whole egg, shaken to perfection, gives it a velvety texture that's unlike any other cocktail.

Ingredients

  • 1 ½ oz Brandy or Cognac
  • 1 ½ oz Tawny or Ruby Port
  • 1 Whole Egg
  • Garnish: Freshly Grated Nutmeg

Instructions

  1. Dry Shake: Add the brandy, port, and one whole egg to a cocktail shaker *without* ice. Seal and shake vigorously for 15-20 seconds. This is the crucial "dry shake" that emulsifies the egg and creates a rich, smooth foam.
  2. Wet Shake: Open the shaker, fill it with ice, and seal it again. Shake hard for another 15 seconds to chill and dilute the drink properly.
  3. Strain: Double-strain the mixture into a chilled coupe or sour glass to ensure no ice chips or unmixed egg solids get through.
  4. Garnish: Garnish with a light dusting of freshly grated nutmeg over the foam.

Pro Tips for Perfection

The Dry Shake is Essential: For any flip cocktail containing a whole egg, the dry shake is the most important step. It allows the egg proteins to create a stable, creamy emulsion before the ice is introduced, resulting in a perfectly smooth and frothy texture.

Choosing Your Port: The type of port you use will change the drink's character. Ruby Port will lend bright, fruity, red-berry notes. Tawny Port will provide a nuttier, more complex flavor profile with hints of caramel and spice. Both are delicious choices.
